Kim Kong Kimchi make fermented, unpasteurised kimchi (with live bacteria, unlike ambient, pasteurised kimchi). It is made with hand-cut chinese leaf cabbage, carrots & spring onions flavoured with ginger, garlic, sweet, smoky gochugaru chilli flakes and miso paste (fish products are traditional in kimchi, but our product is vegan so we use miso for umami flavour instead). Some kimchis are jarred after just 3 or 4 days, but to give a richer, more developed flavour, ours is fermented for over a week. It has won multiple awards (including many Great Taste stars) and been praised by the likes of Nigella Lawson, Tim Spector, Felicity Cloake and Meera Sodha.
